Ingredients:
- Oil,
- 500 gr. of artichokes,
- 100 gr. of peas,
- 1 large red bell pepper,
- 500 gr. cauliflower,
- 500 gr .. of mushrooms,
- 200 gr. of tender beans,
- 3 bunch tomatoes,
- 1 onion,
- Shawl,
- Pepper,
- Saffron,
- 800 gr. of rice. for the vegetable broth:
- Celery sticks,
- 1 bunch of parsley,
- 3 carrots,
- 1 bunch of turnips,
- Water,
- 3 garlic cloves,
Preparation
Fry the garlic and save it. Then fry the vegetables but use this order: the red pepper, the peas, the artichokes, the crushed onion, the broad beans, the paella vegetables, the grated tomatoes and, finally, a mince of garlic and parsley. Season with salt and pepper. Add a casserole of water and the chopped cauliflower and cook for 30 minutes.
In another pan, cook the rice. season it with salt, saffron, pepper. Then, mix the two pans and cook it another 10 minutes and that's it, ready to serve.
