Vegetable Coca

Today we prepare a Vegetable coca, a simple recipe that is very good and is very similar to a pizza. It is ideal to share in a starter or aperitif, also for a dinner.

On this occasion I have prepared it only with vegetables, it is how I like it the most, but we can put a few pieces of cheese, olives, anchovies that go very well with vegetables.  The dough is similar to that of bread, it is fluffy Since adding the yeast makes it rise, but if you like it finer and crunchier, you just have to do it without adding the yeast, it will be very good too.

The quantities of the vegetables I do not put them since it will be to the taste of each one.

Ingredients
  • For the mass.
  • 300 gr. Of flour
  • 150 ml of water
  • 90 ml. Of olive oil
  • 25 gr. Fresh Yeast
  • Sal Island
  • For the filling:
  • Onion
  • Red pepper
  • Green pepper
  • Zucchini
  • Fried tomato
  • Olive oil

Preparation
  1. In a bowl we put the flour, a teaspoon of salt, the olive oil and the yeast dissolved in a glass of warm water, we mix everything well until it is a smooth dough. We form a ball with the dough and cover it with a cloth and leave it for about 40 minutes until it doubles in volume
  2. While we will clean the vegetables and cut them into very thin slices.
  3. When the dough is there, we stretch it again.
  4. We prepare a baking tray, we put a vegetable paper, we stretch the dough giving it a rectangular shape we will put it on the well stretched baking sheet.
  5. We put a little fried tomato throughout the dough and we are putting the slices of vegetables around the dough well distributed, the amount will be to your liking, we sprinkle with a little oil and salt, we put it in the preheated oven at 180ºC about 30-40 minutes or until all the coca is golden brown and the vegetables crisp.
  6. We take out and serve hot.
  7. Ready to eat!!!
