How do you fancy a fresh dessert at this time of year? An ice cream, a yogurt dessert or some vegan vanilla custard as these become a great alternative. These custards are also very easy to prepare, so they are ideal for treating yourself to a treat on any given day.
They also become a very helpful dessert when you have guests. You can leave them made the day before and thus you will have one less thing to deal with in the morning. And by being vegan, you will ensure that everyone can enjoy them. And isn't that one of our goals when we have guests?
You can use any vegetable drink to prepare them. At home we have tried them with oat drink and almond drink and everyone has their favorites. Personally, I like the intense flavor provided by the almond drink, but perhaps the oatmeal drink is more neutral. Try both and decide!
The recipe
- 300 ml of vegetable almond drink (without sugar)
- 1 tablespoon cornstarch
- 1 tablespoon agave syrup
- 1 teaspoon of vanilla
- Cookies (to decorate)
- Cinnamon to taste
- In a bowl we mix the vegetable drink with the Cornstarch until it is well dissolved.
- then in a saucepan heat the agave syrup with the vanilla over medium heat.
- when i get hot we incorporate the almond drink with the Cornstarch and cook over medium heat and stirring for a few minutes or until the mixture thickens slightly.
- Then we pour it into a glass and let it warm up before taking it to the fridge to cool down.
- Once the vegan vanilla custard is cold we serve with crushed biscuit and cinnamon to taste.
