Ingredients
  • 400 g of flour
  • 100 g icing sugar
  • 300 g. cold butter
  • 140 g. ground hazelnuts
  • A pinch of salt
  • Extra icing sugar for dusting
  • Vanilla sugar

Preparation
  1. We put the flour, ground hazelnuts, sugar and salt on a clean surface. Let's create a kind of volcano; we make a hole in the center.
  2. We incorporate the butter cut into small cubes in the center.
  3. We knead the ingredients until you get a smooth dough. We must work the dough as little as possible so that it does not get too hot.
  4. We wrap the ball of dough in plastic wrap and leave rest in the fridge at least 1 h.
  5. We preheat the oven at 180 ° C
  6. We take half of the amsa out of the fridge, divide into small walnut-sized portions. We create small rolls and give them crescent shape.
  7. We place them, as we form them, on the lined baking tray with greaseproof paper.
  8. Bake 10-12 minutes until lightly browned. We take them out of the oven.
  9. While they're hot we sprinkle them with a mixture of icing and vanilla sugar.
  10. Let rest.

Notes
Do not overwork the mixture, which is necessary to unite the ingredients and form a ball.
Let them rest; they will be better after a day or two.
Do not try to move or handle them while they are still hot, they are very fragile.
