I don't know about you, but I love strawberries with cream. During strawberry season, I thoroughly enjoy this traditional dessert, so easy to make. Today, we use it to accompany a soft vanilla cake, thus giving it an extra flavor, color and texture. Would you like to try it?

The ingredients of the cake are the usual ones for this type of preparation: eggs, flour, cornstarch, sugar and olive oil. Nothing that we cannot find in our usual supermarket and / or that we do not have in our pantry. Do you have half an hour? It is everything you will need to prepare this fantastic dessert or snack.

Ingredients
For the sponge cake
  • 65 g. all-purpose flour
  • 2 tablespoons cornstarch
  • 3 eggs L
  • Yolks 2
  • 100 g. of sugar
  • ⅛ teaspoon of salt
  • 1 teaspoon vanilla extract
  • 60 ml. mild olive oil
For the vanilla cream
  • 200 ml cream to assemble
  • 2 tablespoons icing sugar
  • ½ teaspoon vanilla extract
To decorate
  • 2 dozen strawberries

Preparation
  1. We preheat the oven at 180ºC and grease a round mold with a diameter of 20-22 cm.
  2. We sift the flour and the cornstarch and we reserve.
  3. In a bowl, we beat the eggs, the yolks, sugar, salt and vanilla until the mixture is white and fluffy.
  4. Then, we incorporate the flour mixture and cornstarch and beat at low speed until integrated.
  5. Then we pour the oil in a thread while we beat to integrate it.
  6. We pour the mixture obtained into the mold and we smooth the surface.
  7. Bake 20 minutes or until toothpick inserted comes out clean.
  8. We take out of the oven and Let it cold down the cake on a wire rack.
  9. As it cools, we prepare the vanilla cream. We whip the cream and when it is creamy we incorporate the ingredients little by little.
  10. We serve the cake with cream and cut strawberries in half.
