Campero, typical breakfast of the villages of the Sierra de Cádiz
In each town there is a traditional gastronomy in which each dish has a very peculiar flavor typical of the area. Therefore, today I have brought you this Campero breakfast typical of the Sierra de Cádiz in which flavors such as olive oil, serrano ham and a good red tomato are mixed.
Breakfast is the most important meal of the day, so they have to go with energy-rich foods to withstand all the hustle and bustle of work and exercise. This country breakfast must be accompanied by a Mediterranean diet so as not to exceed ourselves in weight.

Preparation
To make this typical village breakfast, first of all we will have to purchase the product. So if you have a family member to entrust it to when they come to visit or when you go on a trip, buy some and try this recipe that will fascinate you. The muffins are very typical in the towns and, therefore, in the breakfasts.
First we have to make a sauce or a puree with tomato. In several places, this sauce is the product of the salmorejo grind that they also make. However, in other towns, they simply place the chopped tomato into chunks and grind it with a little salt. If you want to give it more consistency you can add a little stale bread.
Afterwards, the slices of ham are placed between two baking plates lined both parts with greaseproof paper, so that they dry and leave a crispy ham.
Now, with all the ingredients prepared, it is time to mount the plate. We will heat the muffin in a toaster or iron. I like it better on the griddle to gradually add the ingredients. When we see that the muffin is somewhat golden on both sides, we open it in the middle and we will return it to the griddle over very low heat.
On the base of one of the parts of the muffin we place a drizzle of olive oil. On this we will place the slices of crunchy ham, on this a little tomato sauce or salmorejo and, finally, a slice of cheese. We will let it melt a little, we will remove it to a plate, we will place the other part of the muffin on top and voila, to enjoy this country breakfast Traditional.
