A few green leaves serve as a base for this salad. Spinach, endives and arugula are some of my favorites to prepare it, but you can create your own mixture. The ideal is to combine leaves with different colors, textures and flavors and adapt the mixture to each season.

The tofu will be the only ingredient that you will have to cook for this salad. And it is that this ingredient can be very bland if it is not given some grace. Ingredients
For the tofu
  • 400 g. firm tofu
  • ⅔ glass of water
  • ½ teaspoon garlic powder
  • 1 teaspoon of sweet paprika
  • ½ teaspoon of hot paprika
  • 1 teaspoon oregano
  • ½ teaspoon cumin powder
  • ½ teaspoon of salt
  • ¼ teaspoon pepper
  • 2 tablespoons olive oil
  • 1 teaspoon soy sauce
For the salad
  • Assorted leaves: spinach, endives and arugula, among others
  • 200g. cooked lentils
  • 2 avocados
  • Olive oil
  • Sal Island
  • Black pepper

Preparation
  1. Cut the tofu into cubes and put it in a pan along with the water and the spices: garlic, paprika, oregano, cumin, salt and pepper.
  2. We heat and we cook over medium heat until the water has been consumed.
  3. Then, add the oil and sauté for 10 minutes over medium-high heat until golden brown.
  4. Once golden, add the soy sauce and skip another minute. Then, we remove to a plate and reserve.
  5. Once the tofu is done, we prepare the rest of the ingredients for the salad. We chop the green leaves and place them on the base of the salad.
  6. We add the lentils cooked. If they are canned, remember to pass them through the cold water tap beforehand.
  7. Then add the tofu and mix all.
  8. Finally, add the avocados rolled and seasoned with oil, salt and pepper.
