Tofu with sauteed mushrooms and cooked potato

Almost every week I sail a firm tofu block and I use it, afterwards, to prepare different dishes for two consecutive days. Tofu with sautéed mushrooms and cooked potato is just one of the many proposals that you can prepare easily and quickly. Do you want to know how to do it?

To my marinate the tofu is key for it to gain flavor. You can do it using the spices that you like the most. My favorites are paprika and oregano, but you could use in addition or instead of these turmeric, cumin or curry, why not! Everything is a matter of experimenting.

Once the tofu is marinated and fried you will only have to combine it with sauteed mushrooms, boiled potatoes and some cherrys to have this recipe ready. But what do you think if we go step by step? Ingredients
For the tofu
  • 400 g. of tofu
  • 250 ml of water
  • 1 teaspoon paprika sweet
  • ½ teaspoon of hot paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon soy sauce
As an accompaniment
  • Small potatoes 4
  • 250 g. mushroom
  • ½ teaspoon garlic powder
  • ½ teaspoon dried parsley
  • 8 cherry tomatoes
  • Extra virgin olive oil
  • Sal Island
  • Pepper

Preparation
  1. We cook the potatoes in salt water; if they are small, they will take approximately 30 minutes to cook.
  2. We take the time to prepare the tofu. To do this, we place the water, spices and diced tofu in a pan. Once done, heat over medium heat, cover and let the tofu cook for 8 minutes. Then, we uncover and cook over medium-high heat until the water evaporates.
  3. After, we pour the oil and sauté for 8 minutes so that the tofu browns. To finish, add the soy sauce, mix and cook the whole for 2 more minutes. We booked.
  4. By now the potatoes are possibly cooked. If so, we remove them from the water, drain and wait for them to warm to peel them.
  5. While we wait, we sauté the mushrooms. We put a couple of tablespoons of oil in a frying pan and when it is hot, we add the mushrooms and brown them on one side, then we add salt and pepper, we add the garlic powder and the parsley and we turn them over to cook them for another minute.
  6. Once all the ingredients are ready, we just have to mix the tofu, the potatoes and the hot mushrooms in a plate or bowl and add the cherry tomatoes to enjoy this tofu with sautéed mushrooms and cooked potato.
