Sky Bacon

Homemade heaven bacon, a traditional sweet that is prepared with egg yolks and sugar, accompanied by a caramel.
The sky bacon is very similar to flan but more forceful, with much more eggs and sugar.
The bacon of heaven It is a sweet that brings back memories, since at home we used to eat it, now this recipe has been lost a bit. Being a very caloric dessert with lots of eggs. I have prepared it these days, a dessert to enjoy after a lunch or dinner with my friends.
It takes many steps and is a bit laborious, but straightforward.

Ingredients
  • Yolks 8
  • Whole eggs 3
  • 450 sugar
  • 250 ml of water
  • For the candy
  • 100 gr. sugar
  • 2-3 tablespoons of sugar

Preparation
  1. To make the sky bacon, we first prepare all the ingredients.
  2. We start by putting the water and sugar in a saucepan to prepare the syrup, we put it to cook over medium heat and stirring we will do it until all the sugar is dissolved, it takes about 15 minutes. You have to be patient.
  3. On the other hand we prepare the caramel, we put another saucepan with the sugar and the 2-3 tablespoons of sugar and we will leave over low heat that little by little it caramelizes without letting it burn, as soon as it takes color it is removed from the heat.
  4. Now we go with the eggs, in a bowl we will put the whole eggs and the yolks, we beat them.
  5. As soon as the syrup is ready, you have to leave it for about 10 minutes to warm. We will add the syrup to the eggs in the form of a thread and stirring without stopping.
  6. Once it is mixed we pass it through a strainer.
  7. We put the oven at 170ºC so that it warms up. You have to prepare a source to make the bain-marie.
  8. We take a source of about 15 × 20 and this will be placed on the oven plate or in another source that is larger.
  9. In the source where we are going to put the bacon, we put the caramel base.
  10. On the caramel, the mixture of the eggs.
  11. We cover this with aluminum foil, sealing the edges well and put it in the other larger source with hot water, which does not exceed the middle of the tray where we have the bacon. This will be in the water bath.
  12. We put in the oven, about 170ºC about 40 minutes, fire up and down. The time may vary depending on the oven.
  13. After this time we click in the center, if it comes out dry it will be ready, remove from the oven and let it cool. Then we put it in the fridge.
  14. And ready until serving time !!! We can accompany it with nuts such as pine nuts, it goes very well.
