At home we really enjoy the weekend breakfasts. Unlike what happens during the week, we do them without haste. Getting up, thinking about what kind of breakfast you want, cooking it and enjoying it while you read the press or talk is a pleasure, isn't it?
The toasts with Scrambled eggs with banana and cinnamon They are a regular at my usual weekend breakfasts. Sometimes I even add a drizzle of some nut cream on top. Do you consume this type of cream? They seem great to me complement for my breakfasts.
These toasts have a sweet touch, the more mature the banana with which you prepare them. As for the preparation, it has no mystery. You will have your toasts ready in just 5 minutes and without too much effort. Do you dare to prepare them next weekend?
The recipe
- 1 plátano
- 1 egg L + 1 egg white
- Cinnamon
- Extra virgin olive oil
- A slice of toasted bread
- To begin with we peel and crush the banana. It is not necessary that it was like a puree, there may be pieces that will give the scrambled texture.
- Then we beat the egg and the white lightly in a bowl. Add the banana and ½ teaspoon of cinnamon and mix.
- We heat a frying pan with a few drops of oil and pour the mixture. Cook stirring continuously until the scrambled mixture acquires consistency.
- To finish we serve the banana scrambled on the bread toast and decorate with a little cinnamon or some nut cream.
