Previously we saw a first part about the tajine, in which I told you what is it and how to prepare it for your first use. We are going to continue knowing a little more about this famous utensil of Arab cuisine, this time we will see the type of heat source that we can use with it and some precautions to take into account.

Can it be used in all kinds of heat sources?

The traditional thing is to use it on charcoal embers, but that does not prevent it from being used in vitroceramics, induction cookers, gas, etc. There are metal diffusers and you can even find tajines with metal base, but it is not essential either if you are careful and use the right temperature. This I tell you from experience, I have used tajines in vitroceramics and in gas cookers without any problem and without diffusers or anything like that, if you take a look at the recipes you can see it. It can also be used in an oven.

Precautions of use

  • As I told you in the previous article, it should not be subjected to sudden changes in temperature because then it could crack. When passing it to the table, place a protector and avoid putting it hot on the countertop (marble, granite, etc.) or putting it in cold water.
  • Do not forget that the mud behaves like a sponge, so it should be cleaned with water and a little soap, rinsing it immediately. Avoid leaving the tajine to soak unless it is with water only, otherwise you could find a soap flavor in your next preparations.
  • And, finally, remember that the tajine keeps heat for a long time even after removing it from the heat, so you must be careful when taking it to take it to another part or at mealtime, you get burned!
