The tabouleh is a typical recipe of Arab cuisine, It has its origin in Lebanon although it is also used in other countries such as Syria or Morocco. The ingredients of this cold salad change depending on the area, and that makes it such an ideal dish, since you can add or remove ingredients according to your personal preference.

In this case I have adapted the recipe to our western tastes, somewhat milder than those of our neighbors. This exotic salad is perfect to have on any given day, but feel free to use it if you have guests at home. Being a different dish you will give your table an original touch, which will delight your guests. But in addition, it is prepared in such a short time, which will allow you to enjoy your time without spending hours in the kitchen. Enjoy it!

Ingredients
  • 200 gr of wheat semolina or cous cous
  • A sweet red pepper
  • A sweet onion
  • A green pepper
  • One or two salad tomatoes
  • A cucumber
  • black olives
  • Extra virgin olive oil
  • Sal Island
  • A lemon

Preparation
  1. First we are going to prepare the couscous, the measure is a glass of semolina per 100 grams approximately.
  2. We put 2 glasses of semolina in a deep container.
  3. Heat 2 glasses of water with a drizzle of olive oil, when it starts to boil, add to the semolina.
  4. We remove and cover, we reserve.
  5. While we are preparing the ingredients, we wash and peel the red pepper, the green pepper, the onion, the tomato and the cucumber, all in small pieces.
  6. Afterwards, we wash and drain the olives and chop them well.
  7. Next, we add all the ingredients to the semolina and stir well.
  8. Finally, we are going to prepare the dressing in a separate container.
  9. Add 3 or 4 tablespoons of virgin olive oil, the juice of a lemon and salt to taste.
  10. Stir well with a fork to emulsify the dressing.
  11. To finish, add the dressing to the salad and stir well.
  12. Cover with a film and reserve in the refrigerator until serving time.

Notes
Let cool for at least an hour so that the salad is much more flavorful.
