Sweet dumplings with angel hair

Today we have enjoyed the whole family for a great pre-Christmas lunch at Grandma's house. We have all gotten together to celebrate Christmas in advance, as some are from abroad. And, for the snack, we have all started to make some Christmas desserts, specifically pestinos and these sweet dumplings stuffed with angel hair.

I love these days that we spend as a family, and we also enjoy these delicious Christmas desserts. I hope you like them and here is the recipe for when you do it.

Ingredients

  • 1 glass of sugar
  • 1 glass of olive oil.
  • 1 glass of white wine
  • Orange and lemon zest and peel.
  • 1 teaspoon of Matalauva.
  • 1 teaspoon ground cinnamon.
  • 1 envelope of royal yeast.
  • 1 kg of flour.

Preparation

First, we will put the oil to heat over medium heat, do not smoke. To this we will add 1 long piece of orange and lemon zest to flavor it. It is important that when cutting the orange and lemon you do not take the white part, since it would make these sweet dumplings very bitter.

When it has started to heat up, we will add the Matalauva, and we will leave it for a few minutes so that it also takes on its flavor. Afterwards, we will transfer this oil to a bowl, removing the orange and lemon zest, and let it warm.

When it is warm, almost cold, we will add the sugar, the white wine, the orange and lemon zest, the cinnamon and the yeast. We will stir well until everything is integrated. Then, we will incorporate the flour little by little, until we get a even elastic and moist dough, but that it does not stick in the hands. And, we will let it rest for half an hour at room temperature, covered with a cloth.

After this time, we will take little portions, which we will flatten on a flat surface, in order to fill them with angel hair. We will close them and apply pressure with a fork on the ends.

Finally, the we will fry in abundant hot oil. We will remove them when they take on a brownish color, they will be drained on absorbent paper, and then we will pass them through a sugar and cinnamon batter.

    It denotes some delicious Empanadillas, but I would like to know, please, how much angel hair is needed and how it is stuffed raw or fried or parboiled.
