Summer potato salad
With the advent of summer we just want to eat things cool y light. Salads are one of the first solutions we usually resort to, although sometimes it is difficult for us to vary them or make them consistent to avoid being hungry every half hour. The salad that I bring you today meets the necessary requirements to become that «ideal summer salad«.

Preparation time: 15-20 minutes
Ingredients for 6 people:
- 6 potatoes
- 2 tomatoes
- A quart of onion
- A quart of Red pepper
- 1 medium can of corn
- 2 cans of tuna
- A good handful of olives pitted greens
- Sal Island
- The juice of medium lemon
- Olive oil
Preparation:
First of all, put water to heat to boil the potatoes or cook them at steam. Clean the tomatoes, pepper, onion and potatoes. Then, peel the latter and cut them into small cubes. Also cut the Red pepper in small squares.
If the water is ready, add the potatoes and the red pepper. In my case I did everything steam in a small couscous dish.
While the potatoes are being made, you can prepare the rest of the ingredients. In a bowl add the corn, olives sliced, the onion julienned, the tomatoes cut into cubes and the tuna. Dress with shawl, the juice in the middle lemon, olive oil and mix everything well.
If the potatoes and the pepper are already cooked, remove them, put them to drain and wait for them to cool. You can lighten this process by putting them under a stream of cold water. Finally, add the potatoes and Red pepper to the rest of ingredients and mix well. Clever! You already have summer potato salad ready to enjoy.

Without a doubt, the ideal accompaniment to this salad can be some chicken or turkey steaks, or better yet, a grilled fish. These lemon chicken fillets they might look great on you, although the salad By itself it can perfectly become a unique dish without the need for accompaniments.

This salad admits a great variety of ingredients, therefore, you can eliminate or add any other that you like, for example: palmetto sliced, lettuce cut into thin strips, cubes of cheese, crab sticks diced, carrot grated, beet grated, etc ...
The best…
You can put the salad in a tupper (without reaching the top) and cover it with plastic wrap. Attach a plastic fork to the lid of the tupper with the help of a bit of tape. Close the tupperware and ready to go and eat anywhere!
