Sumiri and egg salad

Now that the fairs of all Andalusia are comingIt is very common to see tortilla and Russian salad tapas in them. These tapas are very traditional, although there is a variant of it made with seafood, specifically sumiri or crab sticks.

El sumiri It is nothing more than a Japanese product created from white meat fish. Here in Spain it is well known as crab sticks, and it is used as a base for salads, sauces and accompaniments or garnishes.

Ingredients

  • 5-6 medium potatoes.
  • 3 eggs.
  • 10 logs of sumiri.
  • 2 cans of tuna.
  • Mayonnaise.
  • Salt
  • Water.

Preparation

First, we will put cook the eggs in a small saucepan with water for about 12 minutes. In addition, we will peel, wash and we will cut the potatoes into small cubes, and we will cook them in a small pot with water for about 20 minutes.

After this time, we will cool the eggs and drain the potatoes. We will put these in a large bowl, to which we will add the two cans of tuna and a pinch of salt.

We will peel and dice the eggs and put them in the same bowl. What's more, we will cut the sumiri or crab sticks, already thawed, in medium dice and we will also put it together with the other ingredients.

Finally, we will mix well with a wooden spoon and we will adding the mayonnaise by tablespoons. Make sure that the salad is not too dry, so if you want you can add a drizzle of olive oil.
