If you like the piquillo peppers, these are sure that you will still like them more. Today we are going to prepare peppers stuffed with potato salad and tuna. A great dish to prepare as a starter, it is fresh and simple.
We can make the filling very varied, this time I have filled them with potato and tuna salad, accompanied by mayonnaise and a salad. But we can make them in many ways, even utilization, if you have a salad, a cooked rice or vegetables, fill them up and you have a spectacular starter.
If you like them very cold, leave them for a few hours before serving them in the fridge well covered with film and they will be delicious.
- 1 can of piquillo peppers
- 2-3 potatoes
- 2 hard-boiled eggs
- 2 cans of tuna
- 1 pot of mayonnaise
- 1 lettuce and olives to accompany
- First we will cook the potatoes in a saucepan with water and salt.
- On the other hand the eggs
- When the potatoes and eggs are cooked and cold, we will cut everything into small squares and put it in a bowl.
- We will add the tuna cans, mix.
- We will put a few tablespoons of mayonnaise, we mix it.
- We fill the peppers with this filling helping us with a spoon, we will put it in a serving source, when they are all filled, we will cover the peppers with more mayonnaise or we will put it in a bowl so that each one is served as desired.
- We wash the lettuce, chop and accompany the peppers, put a few hundred olives on top.
- We will put them in the fridge covered with plastic wrap until serving time so that they are very cool.
- And they will be ready to eat !!!
