Ingredients
- 2 large aubergines
- 375 grams of minced meat
- Two onions
- 2 peppers
- 2 tomatoes, crushed
- Sal Island
- Black pepper
- Virgin olive oil
- Grated or sliced cheese
Preparation
- The first thing we do is cut the green of the aubergines and put them in a pot with water to cook. We do this to clean the skin well and also to be able to remove the pulp from its interior to be able to use it later.
- While the aubergines are cooking, in a frying pan with olive oil previously hot, we add both onions clean and cut into small cubes, along with the two peppers also chopped. When all this is pochadito, we add the minced meat. We let it be done for a few 10-15 minutes over medium heat and we are stirring. We add a little salt and black pepper.
- The next thing will be to put the two of them in the pan crushed (peeled) tomatoes. And once the eggplants are soft, we will cut them in half and remove almost all the pulp from inside with the help of a spoon (we leave a little so that the skin is not too thin). The pulp that we remove is added to the pan with the meat and vegetables and stir well, until everything is mixed.
- When the mixture is done, the next step will be to fill the aubergines that we have opened in half with it. And we apply above grated cheese or sliced cheese.
- We put them on a baking tray and put it in it for a few 15 minutes at 200 ºC.
- And ready! Dish prepared for two.

You can add a little bechamel before the cheese, but this is optional.
