Ingredients:
Albacota (white tuna) 800g
Zucchini baby 100 g
Baby aubergines 100 g
baby carrot 100 g
Fresh shiitake
100 grams of mushrooms
Dried tomatoes 100 g
3 tablespoons olive oil
Balsamic vinegar
2 teaspoons sugar
Salt and pepper to taste
Preparation
Put the dried tomatoes together with the olive oil, the balsamic vinegar and the teaspoons of sugar, in a blender. Process to form a thick vinaigrette. Cook the albacore in a steamer with the baby vegetables. Grill the shiitake mushrooms and mount on the plate.
