In my freezer there are always squid, both in the form of rings to incorporate into rice and vegetable stews, and whole to prepare recipes like this one. A very easy version of squid with onion that I have named squid with onions in white wine.
Olive oil, onion, squid, white wine, salt and pepper. You will not need more ingredients to prepare this recipe which is a great resource to complete lunches or dinners. Why? Both for its simplicity and for the speed with which it is prepared, no more than half an hour.
One of the keys to this dish is poach the onion slowly. You can do it until it begins to caramelize or in the absence of time, stay in a middle point as I usually do. I usually cook it for 20 minutes while I set the table and prepare the squid and they are enough for it to take on a very subtle golden color.
The recipe
- 3 tablespoons of extra virgin olive oil
- 2 large onions
- Sal Island
- Pepper
- 450 g. clean squid
- 1 glass of white wine
- We cut the onion in julienne.
- Once done, heat the olive oil in a large frying pan or low saucepan and poach the onion with a pinch of salt over medium heat first, low medium heat later, a minimum of 15 minutes.
- Meanwhile, we clean -if we didn't already have them clean- and we cut the squid into rings. After the we dry well with absorbent paper and we reserve them.
- Once the onion is tender and has taken on color add the squid, the white wine and a pinch of ground black pepper and mix.
- Cook over medium heat for 8 minutes, so that the alcohol evaporates and the squids are done.
- We serve the squid with onion and white wine freshly made.
