Ingredients
- 1 kilo of squid
- 2 onions
- 1 garlic clove
- A handful of parsley
- 150 ml. white wine
- 1 hoja de laurel
- 1 pinch of pepper
- Olive oil

Preparation
- To make the squid in onion sauce, we will first clean the squid, remove the skin, clean the inside and remove the legs.
- Peel the onions, cut it into small pieces or strips. We put a casserole with olive oil when it is hot we add the onion, we let it cook over medium heat until it is well poached, before it is well poached we add the sliced garlic and the bay leaf.
- We add the white wine to the casserole, let it boil for 3-4 minutes so that the alcohol evaporates.
- Add the squid along with the legs, add a little salt and pepper. Let it cook over medium heat for about 20 minutes or until tender. If they are too dry, add a small glass of water.
- Once the squid are tender, we taste the salt and rectify.
- Chop the parsley and at the last moment add it over the squid.
