Ingredients
  • 1 kg of squid
  • 200 ml of white wine
  • 200 ml of fish broth
  • 1 cebolla
  • 6 cloves of garlic
  • 1 chilli
  • Paprika
  • Olive oil
  • Sal Island

Preparation
  1. In a pot, we pour a good stream of extra virgin olive oil. Heat and then add the onion, well cut into slices, as well as the garlic, already peeled.
  2. When the sauce is done, add sweet paprika to taste (mostly to add color to the dish). We sauté it a little with onion and garlic and then we take the squid already clean and whole.
  3. We let it cook for a few minutes together with the rest of the ingredients, and then we add the 200 ml of white wine, the 200 ml of fish stock, a little salt and a chilli.
  4. We leave over medium heat around 25 minutes, until the squid are soft.
  5. We try from time to time, and when we consider it appropriate, we set aside.
