Spinach ravioli with lasagna plates

Spinach ravioli

Hasn't it ever happened to you that you want to enjoy some delicious ravioli and you don't have the product in the pantry? It has happened to me thousands of times, and it was not time to make fresh homemade pasta because I was running short of time. That's when the lightbulb went on and I thought of a quick option.

This idea turned out to be using lasagna plates to make these ravioli. A somewhat risky idea but it turned out very good since my guests loved it. Since then I use these pre-cooked plates for when I want to make pasta.

Ingredients

  • 8-9 plates of lasagna.
  • 600 g of fresh spinach.
  • 1/2 onion.
  • 2 garlic cloves.
  • Olive oil.
  • Pinch of salt.
  • Thyme.
  • Water.

For cheese sauce:

  • 200 g of liquid cream.
  • 150 g of grated cheese.
  • Pinch of salt.
  • Pinch of parsley
  • Pinch of oregano
  • Pinch of nutmeg

Preparation

Firstly, we'll dip the lasagna plates in a large bowl filled with warm or hot water. We will leave about 10-15 minutes to soften.

Then, while the plates are soaking, we are doing the filling. We will finely chop both the garlic and the onion, and we will sauté this in a small frying pan with a drizzle of olive oil. When they have taken color, we will add the spinach and cook until they are reduced. Reserve draining in a colander.

Next, we will put a wide pot full of water to heat. While it starts to boil, we are drying the lasagna plates and we will begin to fill it with the cooked and drained spinach. We will cut the plates to the size that we have chosen to make the ravioli and we will glue them with a little water and pressing with the tines of a fork.

Then, we will also do the cheese sauce. In a saucepan we will put the liquid cream and when it starts to boil we will lower the heat and add the grated cheese and all the spices. We will let it cook until it reduces a little.

Finally, when the water has started to boil, we will carefully submerge each ravioli and let them cook a few 5-8 minutes approximately. We will dry on absorbent paper and plate with the cheese sauce.

      They are the normal ones, the ones that you have to hydrate in water.
