Spinach and rice dumplings
All members of the family love being able to enjoy a great lunch with meatballs, in addition, these can have any type of combination since they are quite versatile. In this case, we wanted to make healthy ones to hold the line At this time of year.
These meatballs are made from a combination of spinach, rice, cheese and turkey bacon, low calorie foods and very rich that will give all the flavor to our meatballs. In addition, they are accompanied by a delicious sauce based on tomato and cream, great for licking your fingers and dipping bread.
Ingredients
- 1 kg of spinach.
- 100 g of rice.
- 1 clove garlic.
- 1 onion.
- 120 g of turkey bacon.
- A little stock cube.
- Grated cheese.
- Flour.
- Egg.
- Water.
- Olive oil.
For salsa:
- 2 fried tomato bricks.
- 1 brick of liquid cream for cooking.
Preparation
First, we will put a large and wide pot to cook all the spinach. These, after 4-5 minutes, we will drain and dry well and reserve it for later.
Then, while the spinach is cooking, we will have cook the rice. In a small saucepan we will put a background of olive oil and we will begin to brown the sliced garlic clove, then we will add the rice and stir a little. We will add a small piece of stock cube and add twice as much water. We will cook for 20-25 minutes.
Afterwards, we will finely chop both the turkey bacon like onion. We will both fry them in a small satin with olive oil. We will drain and let it temper.
Once all the ingredients are cooked, in a large bowl, we will arrange them all together and add the grated cheese to give it consistency. We will do the dumplings balls and we will pass them through flour and egg and then fry them in plenty of hot oil.
Finally, we will carry out the salsa. In a large frying pan we will put the fried tomato and the cream and let it reduce for about 10 minutes. We will add the meatballs to the pan and cook for 8 to 10 more minutes.
