The croquettes have a bit of work, but it is worth it, we can also take advantage of it and make more quantity and freeze.

Ingredients
  • 200 gr. spinach
  • ½ onion
  • 30 gr. cheese to taste
  • 40 gr. flour
  • 50 gr. of butter
  • 500 ml. milk
  • Nutmeg
  • Sal Island
  • 2 eggs
  • 150 gr. breadcrumbs
  • Buy

Preparation
  1. To make the spinach and cheese croquettes, first we wash the spinach, we cut the onion into small pieces.
  2. We put a pan with a little oil, add the onion, let it poach over medium heat, when it is poached add the spinach, sauté it all together for a few minutes.
  3. We add the butter to this mixture, add the flour and mix it and let it cook a little with everything.
  4. We heat the milk in the microwave or in a saucepan.
  5. Once the flour is there, we will add the milk, add a little and stir, mix.
  6. We add a little more milk, mix. Halfway through cooking we add the grated cheese, a little nutmeg and salt, we taste.
  7. We continue adding milk and so on until we have a dough that detaches from the pan.
  8. We pass the dough to a source and let it cool. If we leave it overnight, better.
  9. We put the beaten eggs on a plate and the breadcrumbs on another.
  10. We put a frying pan with the oil to heat.
  11. We form the croquettes with the dough. We pass them first through the egg and then through the breadcrumbs.
  12. Once the oil is hot, we will fry the croquettes.
