Mix of spices for chicken skewers, traditional recipe

Spices for chicken skewers

And from Italian cuisine we go to Arabic cuisine, today I am going to tell you how to make the mix of spices for the chicken skewers, an essential recipe within this gastronomy. You already know that spice mixtures are very common in Arab gastronomy, the best known is the rass el hanout, which has 30 spices as well as 100, each place and even each spice seller has its own mix.

Later we will talk about rass el hanout and of course we will also see the mix of spices for the lamb skewers (The party is coming soon), but today we are going to focus on the mix for the chicken. Go for it!.

Ingredients (for a 50 ml bottle)

  • 1 teaspoon cumin
  • 1 teaspoon dried parsley
  • Half a teaspoon of black pepper
  • 1 teaspoon of turmeric
  • A pinch of ginger
  • A pinch of cinnamon

Crafting

In a large and closable pot we are going to add the cumin, parsley, pepper, turmeric, ginger and cinnamon. We close the jar, shake well so that all the spices are mixed and store the mixture in a closed jar.

Suggestions

This mix that I show you is, let's say "the basic one", but then each home can have its variations. The pinch of cinnamon is part of my own variation, there are also those who put food coloring or white pepper, for example. You can also do without the dried parsley and, when making the skewers, add very minced fresh parsley.

When it comes to using it

When we are going to make the skewers, we will simply cut the chicken into cubes, place it in a container, add the mixture of spices, salt and a little olive oil (there are those who also put chopped onion). We stir so that the chicken and the spices mix well and we will leave it for at least half an hour, so it will take on more flavor.

Then we can cook the chicken by nailing it on the skewers and making them on the barbecue or, if you don't have a barbecue, you prefer to do something faster or whatever you can do it in the pan. It is not necessary to add more oil, with which it takes from the mash is already enough.

Bon Appetite!.
