Spaghetti with zucchini and eggplant
The pasta dishes They are always very helpful, easy to prepare and, in most of their versions, they are liked by children. That is why these types of recipes are the stars of every home, as well as a fantastic opportunity for vegetables to be a little more accepted.
On this occasion I present you a plate of spaghetti with zucchini and eggplant, of which they had given me the recipe for a long time, but the aubergine issue did not convince me ... Until I tried it !.

Ingredients:
- Spaghetti
- 2 zucchini
- 1 eggplant
- Ketchup
- Olive oil
- Sal Island
- Pepper
Preparation:
On the one hand we are going to boil the spaghetti following the manufacturer's instructions. When they are ready we will drain and reserve them. On the other hand we are going to heat a little olive oil, when it is hot we will add the zucchini and the diced aubergine.
We will give a few turns to cook them and we will add a little water, very little, just enough so that both vegetables finish cooking. We add the tomato sauce, season and we have our sauce prepared. Now we just have to mix the sauce with the spaghetti and that's it.
When serving ...
You can add grated cheese before serving.

If you prefer they have something else you can add mushrooms or a little minced meat.

For me, the best thing about this recipe is that it goes a bit out of the traditional pasta dish with tuna or Bolognese, but in a simple way.
