When one needs to prepare something quick to eat, pasta is always posited as a great choice. The spaghetti with carrot and cheese that we prepare today are fast, yes, but they are also full of flavor and color. Try them and you will know that I am not lying.
The spaghetti is accompanied in this case with onion, carrot and a little green pepper. I have cut both with the mandolin very thin to save cooking time, something that will not be essential if time is not a problem for you. 15 minutes I have been slow to do everything and present it on the table.
- 180 g. spaghetti
- 6 large carrots
- 1 purple onion
- ½ green pepper
- 40 g. grated cheese
- Olive oil
- Sal Island

- We prepare the vegetables. We peel the carrots and cut them into very thin strips with the mandolin. We do the same with the onion and pepper.
- We put the vegetables to poach in a frying pan with a good jet of oil. Season with salt and pepper.
- At the same time, in a large casserole, cook the spaghetti following the manufacturer's instructions.
- When the pasta is ready, we drain it - reserving half a glass of the cooking water, we add both the pasta and the water to the pan and mix so that all the flavors are integrated.
- Finally, we add the cheese and stir so that it melts.
- We serve fresh.
