Today I bring you some wonderful guests for a picnic day on the beach or in the country: sobrasada dumplings. We are not going to complicate our lives (that we are on vacation) and I am going to teach you how to do them in less time than you think. Its genuine flavor will surprise you (and hook you).

For those who do not know, Balearic gastronomy goes beyond the ensaimada, and these sobrasada dumplings are a good example of it.

Ingredients
  • 2 packages of wafers prepared to make dumplings.
  • 400 gr of sobrasada
  • ½ green pepper
  • ½ red pepper
  • ½ onion
  • fennel

Preparation
  1. Chop the onion very finely and brown in a pan with 1 tablespoon of olive oil.
  2. When the onion has taken color, add the chopped green and red pepper as well and let it fry.
  3. Once we check that the vegetables are cooked, we turn off the heat, add the sobrasada and fennel and let everything mix with the residual heat.
  4. Let it cool for 1 hour at room temperature (so that it takes consistency).
To fill the dumplings ...
  1. We take the wafers one by one and on one half, we deposit a tablespoon of the mixture that we have prepared.
  2. We fold the wafer and seal it with a fork around the edges.
  3. We repeat the operation until we finish with the wafers.
  4. In a frying pan with plenty of oil, fry the wafers until golden brown.
  5. They are ready to serve.
