Today I invite you to prepare a recipe that from time to time we like to enjoy at home with a rice cup: squid in ink with fries. A classic that the potatoes cut into cubes and fried until they are golden and crisp complement perfectly. And the thing is… what dish doesn't go well with some potatoes?

The squids in their ink are very easy to prepare, especially when we throw them out of the freezer like today. At home we always like to have a tray of frozen clean squid to prepare rice or quick recipes like this one to which you will only spend 25 minutes.

In addition to the obvious ingredients, there are few more in this recipe to which you can also add white wine. I have not done it this time because I have tried to make the recipe as simple as possible, but it adds a touch of flavor to the sauce that I personally like a lot. Ingredients
  • 2 tablespoons of extra virgin olive oil
  • 1 white onion
  • 400g defrosted clean squid
  • ½ Italian green pepper
  • 2 tablespoons homemade tomato sauce
  • 1-2 sachets of squid ink
  • Water glass 1
  • Salt and pepper
  • 1 potato

Preparation
  1. To begin with finely chop the onion and the pepper.
  2. Then, heat the oil in a frying pan or saucepan and we fry both vegetables for 5 minutes.
  3. We take advantage of that time to chop the squid and peel and dice the potato.
  4. After five minutes add the squidTake the frying pan and fry for four minutes.
  5. Meanwhile, mix in a cup tomato sauce, ink and water. Add the mixture to the pan and a little more water if necessary so that the squids are almost covered.
  6. Mix, cover the pot and We cook 10 minutes.
  7. We take advantage of this time to season the potatoes and fry them in the fryer until they are well browned. Then we take them out and reserve.
  8. After 10 minutes, uncover the pan and let the sauce get fat five minutes. If it does not do it enough, we take out 3 tablespoons of the liquid, mix them with one of cold water and a teaspoon of Cornstarch in a cup and pour the mixture into the pan so that when mixed the sauce fattens.
  9. We serve the squid in its ink with hot French fries.
