Shrimp stuffed zucchini

Today we are going to prepare an easy and healthy recipe that the whole family will like. The shrimp stuffed zucchini It is a very tasty and different dish that will surprise even the little ones.

In addition, if you have guests, you can have the dish completely prepared in the absence of the last blow to the oven and thus you will have more time to enjoy the guests, avoiding having to be in the kitchen for a long time.

Ingredients for 5 people)

  • 5 not very large zucchini
  • 1/2 onion not very big (150 gr. Approximately)
  • 500 gr. peeled prawns
  • grated cheese
  • 2 garlic
  • 2 tablespoons of flour
  • oil

  • pepper

In a saucepan we put the minced garlic with a drizzle of oil and fry it a little for 3 or 4 minutes. When it is starting to brown, add the prawns previously seasoned and leave it for another 3 minutes. We take out on a plate and reserve.

Peel and chop the onion. We put it in a saucepan with a little oil and let it saute little by little for 10-15 minutes over low heat.

While the onion finishes browning, wash the zucchini with water and scratch them with a fork. Sometimes zucchini skin is bitter and to remove the bitterness, scratch them with a fork as you can see in the image.

Then we wash them again to remove the remains of skin that remain on it. We cut them in half (lengthwise) in the way that they are best going to hold matches.

We empty the zucchini with the help of a fruit and vegetable emptier.

We take the filling of the zucchini, we chop it a little so that we do not have very large pieces and we put it in the casserole with the onion. Add the salt and pepper and leave it over medium-high heat for 20-25 minutes, being careful not to stick.

While the zucchini and onion finish cooking, put the zucchini shells face down on a paper to release the water they have. Then we put them on an upside-down baking dish and add a little salt to them. You can put a baking paper so that the tray does not stain so much when baking it.

Once the filling has finished cooking, add two tablespoons of flour and keep it over high heat for two minutes. We put the shrimp aside in the first step and we leave it another two minutes turning it.

We preheat the oven to 180º and fill the zucchini.

We put a little grated cheese on top and put them to bake for 35 minutes.


If after this time the zucchini have not browned, put it on the grill for a couple of minutes and ready to eat.

      Hello, I put both heating elements at 180 degrees and when the last 5 minutes remain, if they have not yet toasted I give the resistance above and at full power. When they are golden I take them out. The skin is eaten as it is soft and is very tasty !!
