Shrimp acapulco

Ingredients:
1 kilo of clean shrimp.
50 grams of butter.
1 clove of garlic previously minced.
1 glass of brandy.
4 tablespoons of oil.
2 tablespoons of tomato extract.
1 tablespoon of chopped parsley.
Salt and pepper.
White rice to accompany.

Preparation:
Put the shrimp in the oil to fry and set aside. Meanwhile, brown the garlic with the butter in a saucepan. To the golden garlic you add the parsley, the tomato extract and the brandy and season it to taste. Cook for 10 minutes. Remove from heat and add the shrimp that you set aside. 

Put everything to rest for 10 minutes so that the flavors permeate well. If you don't want it to cool, you can put it to rest in a water bath. Then serve the rice in individual casseroles or in a source if you prefer and cover with the shrimp mixture and sauce.
