Shortbread with heather honey

The sohortbread, originating in Scotland, they are delightful. They can be found for sale in certain delicatessens, but why buy them when it is so easy to make them? Delicate and fragile, these mantecados are a great snack to accompany your afternoon coffee.

They are made with usual ingredients in our pantry: flour, butter and sugar. Starting from that base, the possibilities are many, being able to add lemon, a combination of orange and chocolate or, as on this occasion, honey, your favorite! This time I used heather honey, a rather dark honey; hence the tan color of shortbreads.

Ingredients

For 10-12 shortbread

  • 200 g. Of flour
  • 20 g. Caster Sugar or Fine Sugar + extra to sprinkle (I show you how to make it at home)
  • 20 g. lavender sugar (you can substitute caster sugar)
  • 125 butter g
  • 2 teaspoons of honey

Crafting

If you can't find fine sugar, you can make it at home. It is as simple as pouring the same weight of normal sugar into the mincer and processing it for 5-10 minutes, thus achieving a finer sugar.

We preheat the oven at 180º.

We combine the flour with the two types of sugar in a bowl.

Then add the cold butter into pieces and work with your fingers, pinching the mixture. After a few minutes we will achieve a texture like crumbs.

We incorporate the honey and we mix everything (it is a rather sticky mixture). We will work the dough just enough to incorporate the honey evenly.

We make a ball with the dough. It can be brittle but I assure you that it is possible to achieve it.

We place the ball on a parchment paper. Crush with the palm of the hand until obtaining a rectangle of 1 cm. thick.

We mark the cuts with a knife. We only want to mark, not cut the cookies.

We sprinkle sugar on top and bake for about 25-35 minutes.

We take out of the oven and Let it cold down. We have just cut the mantecados, carefully, they are very fragile!
