Black fideuá with cuttlefish, a delicious and simple dish to prepare. Now we can find the black noodle, they sell it in stores where they have pulses in bulk. When I saw it, I did not think about it and I tried it, apart from being good, it is a dish that calls a lot the black noodles and it is a very attractive dish.
The most important thing about this fideuá is to prepare a good fish broth with bones and fresh fish heads and thus success will be assured. It is prepared like any fideuá and is accompanied by an aioli.
- 300 gr. Noodle
- 2 cuttlefish
- ¾ of homemade fish broth
- ½ onion
- 2 garlic
- Crushed tomato
- Aioli to accompany
- We are going to prepare the fish broth. In a pot we put fish bones, the three whole peeled garlic, a little salt and a few sprigs of parsley.
- In a paella with a little oil, just a tablespoon, we will fry the noodles. We will reserve.
- Then we will fry the cuttlefish cut into pieces. We reserve
- We will prepare the sauce, with the onion, garlic and half a can of crushed tomato. I used a homemade tomato that they gave me and it already has the onion and garlic, all crushed.
- When it is done, we will add the cuttlefish, the noodles and cover it with the broth and let it cook for about 15 minutes or until all the broth dries.
- We will taste it for salt and rectify
- When it is done, we will turn it off and let it rest for 5 minutes and the noodles will stand on end.
- The trick to making the noodles stand on end without having to put them in the oven is to fry them first.
