Ingredients

  • 1 green pepper
  • 2-3 ripe tomatoes
  • A few strands of saffron or coloring
  • Oil and salt
  • For the fish broth:
  • Fish bones
  • 1 cebolla
  • 2-3 garlic
  • A little parsley

Preparation
  1. We first put the broth to prepare, in a saucepan with water and salt we put all the ingredients and let it cook for about 15 minutes. After this time, we strain it and reserve it covered so that it does not get cold.
  2. In a paella pan with a little oil, sauté the prawns and prawns, remove.
  3. Peel and chop the garlic, the green pepper, add everything to the paella pan and sauté it, we also cut the cuttlefish and squid into pieces and add it, when we see that the cuttlefish and squid are almost done, we grate the tomatoes and add it , we stir everything well and let the sauce cook for about 5 minutes.
  4. Add the rice, sauté well and add the hot fish stock, which will be twice that of the rice, add the saffron threads and salt to taste, let it cook over high heat for about 10 minutes.
  5. Then we lower the heat we put the clean mussels, after another 5 minutes we put the crayfish, the prawns and the prawns, we leave it for a couple of minutes and we turn off the heat.
  6. We let it rest for a few minutes.
  7. The cooking time varies a few minutes depending on the rice used.
  8. Ready!!!
