Today I propose a great weekend breakfast: scrambled eggs with goat cheese. A few years ago I would never have imagined having something like this for breakfast, but now I like to have it from time to time. Easy and quick to prepare, you can eat them in many ways
You can accompany the scrambled eggs with avocado or place it on a bread toast smeared with garlic and crushed tomato. Scrambled eggs are very creamy and freshly made, it is a king's breakfast. And during the weekend, when we have more time, it is when we allow ourselves to do so.
- 1 teaspoon of olive oil
- 4 large eggs
- 20 g. goat cheese
- Sal Island
- Pepper
- Chives for garnish
- We beat the eggs in a bowl and season.
- We put a teaspoon of oil in a pan and heat over medium heat. When it's hot we add the eggs and with a spatula, we remove them. The oil should not be too hot so that the egg does not set immediately when you put it in the pan.
- We keep stirring. Little by little the mixture will go losing water and thickening.
- When they are to our liking, we add the cheese crumbled goat on top and remove from heat.
- We stir once more, distribute on the plates and decorate with chives.
