Scalding gratin

Hello everyone! Today I bring you a very easy and rich recipe vegetable-based, it is prepared in a moment and the oven takes care of the rest, ideal for dinner on these days when you just want to light dishes.

Difficulty level: Very easy

Prep time: 5 minutes + bake time

Ingredients:

  • 2 aubergines
  • 2 red peppers
  • 2 chives
  • Olive oil
  • Lemon juice
  • 1 egg
  • Some grated cheese
  • Sal Island
  • Pepper

Preparation:

We put the vegetables on the baking sheet and sprinkle them with a drizzle of olive oil and a little salt. We put it at 200º and bake for 40-50 minutes, until all the vegetables are done. We let them cool a bit and cut them into strips.

We place the vegetables alternating with each other in a source or a baking tray, we cover them with mayonnaise (It can be bought or homemade) and we put the grated cheese on top. We bake again until gratin to our liking.

To make the homemade mayonnaise

We will use a hand mixer. In the blender glass we add an egg, a glass of olive oil, the juice of a lemon, salt and pepper (in that order). We put the mixer at the bottom of the glass and begin to beat, without moving it from the bottom. When the mayonnaise begins to rise, we will make slow movements up and down with the mixer.
