- 1 large or 2 medium zucchini

Preparation
- To make the vegetable tart we will start by preparing the vegetables. We clean the vegetables.
- Put a pan with a splash of olive oil over medium heat, add the leeks and zucchini, let cook until golden brown. Cover the pan for about 5 minutes so that it steams up and cooks without the need to put a lot of oil, remove the lid, add a little salt and let it finish cooking, about 5-8 more minutes.
- When you are booked.
- While the vegetables are cooking, turn on the oven at 180ºC, heat up and down.
- Put the eggs and evaporated milk in a bowl. We mix.
- Add the vegetable mixture, the leek and the zucchini. We add a little salt and pepper.
- Add some grated cheese and mix. The amount of cheese to your liking.
- We prepare the mold, if we have a better removable mold. We put the dough in the mold. Add the previous mixture.
- I put a little more grated cheese on top and put it in the oven in the middle tray.
- Bake the quiche for about 25-30 minutes. The puff pastry base must be made and the surface of the cake golden. The time may vary depending on the oven.
- We take out and serve.
