Butifarra fideuá with mushrooms, a variant of the traditional Valencian fideuá. This combination of mushrooms with sausage is very good and accompanied by a good all i oli is a very good and complete dish.

Ingredients
  • 350 gr. noodle no. 2
  • 200 gr. assorted fresh mushrooms
  • 5-10 gr. dried mushrooms
  • 2 sausages or sausages
  • ½ onion
  • 2 garlic
  • 2 grated tomatoes or 4-5 tablespoons of crushed tomato
  • A pinch of paprika
  • 1 liter of chicken or vegetable broth
  • Dried mushroom water

Preparation
  1. First in a paella pan with a couple of tablespoons of oil, we will fry the noodles, when they take color we take them out and reserve.
  2. We put a glass of water with the dried mushrooms for half an hour, we remove them, drain and reserve that water.
  3. In the paella pan we sauté the fresh mushrooms over medium high heat and those that we have had soak and reserve, we do the same with the sausage, cut it into pieces, sauté and reserve.
  4. We prepare the sauce with the onion, the minced garlic and the tomato, we fry it, we add a little paprika, we add the chicken or vegetable broth, we strain the water that we have reserved from the mushrooms and we also add it together with the broth.
  5. When it starts to boil, we put the noodles, we stir it so that everything is distributed and we put the mushrooms and the sausage on top, we taste the salt and we let it cook until the broth is consumed, about 10 minutes, it must be dry.
  6. We turn off and let it rest for 5 minutes and this way the noodles will be put on end.
  7. We serve it warm accompanied by all i oli sauce.
  8. And ready to eat!!!
