Ingredients
- 1 eggplant
- 2 Zucchini
- 2 green peppers
- 1 red pepper
- 2 onions
- 3 ripe tomatoes
- A splash of fried tomato

Preparation
- To prepare the sanfaina, we first wash the vegetables, cut the onion, green pepper and red pepper into pieces.
- We put a frying pan with a good jet of oil and add the chopped vegetables. We let them fry.
- On the other hand, we chop the zucchini and the aubergine.
- When the vegetables are a little transparent we will add the zucchini and the eggplant. We put a little salt and let it cook for 5 minutes.
- We let it cook everything together. If necessary we will add a little more oil. While we are peeling the tomatoes, we chop them, we add it together with the vegetables. We remove everything.
- Then we add the fried tomato. We let it cook for about 10 minutes.
- When we see that the vegetables are browning, we taste the salt, we rectify.
- And ready to eat
