Come the weekend, there are many ways to improvise a quick dinner. One way to do this is by betting on sadwiches. We just have to open the fridge and find the perfect combination for your filling. Thus arises this avocado sandwich, egg and dried tomatoes.
The dry tomatoes it is possible that you find a strange relationship. If I tell you that we have used them to create a kind of aioli with which to give the sandwich a bit of creaminess, it is probably not so weird anymore. If you have 30 minutes, you can prepare this simple recipe.
- ½ cup mayonnaise
- 3-4 dried tomatoes in oil, chopped
- 1 tablespoon fresh basil, chopped
- 1 garlic clove, minced
- 1 teaspoon of lemon juice
- 3 teaspoons olive oil
- 2 eggs
- Chopped thyme
- Sal Island
- Freshly ground black pepper
- 6 tomato slices
- 1 Avocado
- 2 handfuls of arugula
- 4 slices of sliced bread
- Extra virgin olive oil
- We prepare the sauce. To do this, we blend all the ingredients with a mixer or food processor until a smooth cream is left. We adjust the salt and pepper.
- We heat olive oil in a small frying pan and we fry the egg with a pinch of salt, pepper and thyme.
- We toast the slices of bread.
- We cut the tomato sliced and open and fillet the avocado.
- We assemble the sandwich. We spread the slice that serves as the base of the sauce and then we place a layer of avocado, another of tomato and top with the egg. We finish with the arugula, drizzle a little extra virgin olive oil and close the sandwich.
