Those of you who follow Cooking Recipes already know what I like salmon…. I usually cook it 3-4 times a month and I always try to find simple but different recipes so as not to get bored. One of the last has been this one that I present to you today with chive and walnut dressing.
I was not very convinced of the texture and flavor that the walnut could incorporate into the dish before trying it. The result, however, I liked despite having too much fat. It's a dressing simple and fast To prepare; with a food processor it will not take more than 10 minutes of our time. Do you try it?
- 3 salmon fillets
- Sal Island
- Freshly ground pepper
- Extra virgin olive oil
- 1 spoonful of butter
- ¼ cup walnuts, lightly toasted
- 1 small garlic clove, crushed
- ⅛ cup of grated cheese
- ¼ cup chives, finely chopped
- ⅓ cup of extra virgin olive oil
- ⅛ teaspoon of salt
- Using a food processor, we crush the walnuts.
- Then add the cheese and garlic and blend again.
- In a bowl, mix the previous pasta with the chives and olive oil. Season and reserve.
- We heat the oven to 200ºC.
- We dry the loins salmon with absorbent paper and salt and pepper
- In an iron pan, add a few drops of oil and when it starts to smoke, place the salmon fillets skin down. Press the tenderloins a little with the spatula to get a crispy skin. Then reduce the heat and cook 3-4 minutes.
- We turn the loins, place a little (very little) of butter on each of them and we take the pan to the oven.
- Cook in the oven for 3-4 minutes, until the salmon is done, and then we remove it.
- We serve with the prepared dressing.
