Ingredients
  • 4 salmon fillets
  • 1 Avocado
  • 10 cherry tomatoes
  • 1 white onion
  • 3 sprigs of coriander
  • 1 lemon

Preparation
The dressing
  1. Peel the avocado, cut it in half, pit and cut into small cubes. We reserve in a bowl.
  2. We squeeze the juice of a lemon over the avocado.
  3. Peel and chop the onion very fine. We add to the bowl.
  4. Chop the coriander sprigs and add to the bowl along with the halved cherry tomatoes.
  5. We put a pinch of salt, stir and reserve in the fridge while we make the salmon.
  6. The salmon (we will not use oil since the salmon already has enough fat)
  7. We turn on the non-stick iron and put the salmon fillets on the skin part first (3 minutes per side maximum). We withdraw.
  8. We place the loins, remove the dressing from the fridge and, with the help of a spoon, pour the dressing over the fish.
