Cheesy rice salad

With the arrival of good weather, more and more we want to eat light and fresh things. The dish that we bring you today meets these two requirements, since it is a rice and cheese salad which also carries some added vegetables.

If you like rice and you like to experiment in salads, here is an example that we made at my house a few days ago. You add those vegetables that you like the most ... Let's experiment!

Rice and cheese salad
The heat and good weather are approaching so you want to eat quick meals to make (so as not to spend too much time between stoves), light meals (so as not to have a feeling of heavy digestion) and fresh. This rice and cheese salad is a good example of that.

Ingredients
  • 200 grams of white rice
  • 1 cucumber
  • 1 green pepper
  • 1 Tomate
  • 1 fresh onion
  • 3 eggs size L
  • Unsalted white cheese
  • Turkey cooked in taquitos
  • Grated cheese
  • Olive oil
  • Sal Island
  • Apple vinager
  • Parsley

Preparation
  1. In a medium pot with water, a little olive oil and a pinch of salt, we put boil the 200 grams of white rice. In another something smaller, we boil the three eggs with a splash of vinegar (this will make it easier to peel once boiled).
  2. While the rice and eggs are being made, let's go cutting all the vegetabless selected next to the cooked turkey and white cheese. We will cut everything into small cubes so that they mix well with the rice. We will do the same with the eggs once they have boiled.
  3. When the rice is ready, we put it together with the vegetables in the same bowl, and we dress to our liking. In my case I added a little olive oil, fine salt and apple cider vinegar,
  4. Above I added a little grated cheese to give it a different touch and garnished with some parsley leaves… and voila! Healthy and light food ...
