As long as I don't have any commitments this day, I try eat healthy and light at lunch on December 31st. Why? Because one day awaits us that what is usually left over is food, because since we meet friends or family we start eating and it is late in the morning of New Year and we are still eating, drinking and celebrating.
For this simple reason I try, not only on the 31st but the days that remain in the middle of Christmas Eve and New Year's Eve, to eat lightly and especially with salads. Of course, as long as I do not have any commitment to someone who must skip this self-imposed "diet". If you want to follow my routine and make a light but quite complete salad every day for lunch or dinner, here is my proposal for today: Salad Mix.
- ¼ iceberg lettuce
- 1 can of tuna
- Corn
- Grated carrot
- 1 boiled egg
- ¼ fresh onion
- ½ cucumber
- The first thing of all will be to wash our vegetables. Next, we cut the lettuce, separating the greener leaves, the fresh onion, from which we will remove the first layer, and the half cucumber. The latter peak very small. We add it all to the bowl or plate.
- Then I add the can of tuna with its own olive oil (if it is in vegetable oil I usually remove it), the grated carrot (if it comes in a pot already grated, I rinse it because it has too much vinegar) and the corn. We also add the egg that we have previously cooked
- The last thing will be to dress as we want: in my case I add olive oil, fine salt and balsamic vinegar.
