The roasted sweet potato with caramelized onion, ham and goat cheese that we propose today can be served as a main course at lunch accompanied by a cup of green beans, as we have done. But also peas, spinach or rice. Choose your own combination!
The sweetness of both the sweet potato and the semi-caramelized onion create a very interesting contrast with the saltiness of the ham. And the goat cheese, the goat cheese melting slightly on the roasted sweet potato, finishes off the equation. Don't you want to try it?
The recipe
- 1 sweet potato
- ½ red onion
- A few cubes of ham
- A few pieces of goat cheese
- Salt and pepper
- Olive oil
- Preheat the oven to 200ºC with air.
- We wash the sweet potato well – I usually do it with the scourer – and we dry it.
- We open it in half and place both halves on the baking tray, lined with baking paper.
- We season and we take to the oven, at least 20 minutes. The time will depend on many factors: the size of the sweet potato, the oven itself... In my case it was 40 minutes, but it is a matter of being vigilant.
- While we roast the sweet potato, cut the onion into julienne strips and poach it in a frying pan with a drizzle of olive oil and a pinch of salt until semi-caramelised.
- When the sweet potato is roasted, we take it out of the oven and place on it the drained caramelized onion, a few cubes of ham and a few pieces of goat cheese.
- We serve the roasted sweet potato as an accompaniment.
