Ingredients
  • 1 chicken, chopped
  • 2 large potatoes
  • Sal Island
  • Pepper
  • Fresh rosemary
  • 1 lemon
  • ½ cup chicken broth
  • 8 French onions
  • 200g. grapes
  • 4 teaspoon extra virgin olive oil
  • ½ glass of cider
  • 1 tablespoon cornstarch

Preparation
  1. We peel, wash and cut the sliced ​​potatoes. We place them as a base in an oven-safe dish and season with salt and pepper.
  2. Next, we dry the chicken with kitchen paper and season it.
  3. We place it in the source along with some sprigs of fresh rosemary and a very clean and chopped lemon.
  4. Pour the chicken broth, place the source in the oven and bake for 40 minutes at 180ºC, with heat up and down.
  5. When there are 5 minutes to go to remove the chicken, sauté the French onions and the grapes in 4 teaspoons of extra virgin olive oil, in a frying pan.
  6. We take the chicken out of the oven, we incorporate the grapes, the onions and half a glass of cider and bake until the chicken is done.
  7. Once done, we remove the chicken from the oven and place the juices in a saucepan. We put 1 finger of water in a glass and we dilute the cornstarch. Add this mixture to the saucepan and cook until boiling. Afterwards, we water the chicken with these juices
  8. We serve the cider-roasted chicken with grapes.
