Ingredients
  • 2 free-range chicken drumsticks
  • 2 medium potatoes
  • Half an onion
  • 2 cloves of garlic
  • Parsley
  • White wine
  • Sal Island

Preparation
  1. First we prepare the chicken thighs, we must remove the excess fat so as not to add excess fat.
  2. We wash well and dry with absorbent paper.
  3. We make some cuts on the meat of the thighs, so that they cook well inside.
  4. We cut the onion in julienne.
  5. Peel and wash the potatoes well, cut into slices approximately one centimeter thick.
  6. In a dish suitable for the oven, place the onion first, then the potatoes and on top of them we place the thighs, first the bottom.
  7. We pour a good drizzle of white wine over the chicken and the garnish.
  8. Peel and cut the garlic into thin slices, place on the thighs.
  9. We add salt and parsley.
  10. Add half a glass of water to the bottom of the fountain, in this way we will reduce the taste of the wine in the sauce.
  11. We introduce the oven preheated to about 200 degrees.
  12. We let the chicken cook on one side for about 45 minutes, depending on the power of your oven.
  13. After that time or when it is well cooked, we turn the thighs and take the opportunity to move the potatoes a little.
  14. Again we let it cook for about 45 minutes, making sure it does not burn too much.
  15. And voila, we have our delicious chicken, with some tender potatoes.

Notes
If you are not going to serve the chicken right away, reserve it out of the oven once it is cooked and heat before serving. This will prevent the chicken meat from shrinking due to the heat.
