Roast chicken with plums and potatoes

El roast chicken It is one of my favorite dishes. I love the contrast of textures between its crunchy skin and its tender interior. At home the most common is to accompany it with an important bed of vegetables and why not, some fruit that incorporates a sweet spot to the recipe.

In this case I cooked the chicken with plums; I can assure you that the sweetness of both the carrots and the plums roasted in the sauce is irresistible. The vegetables and fruit make it a very complete dish, however, this time I was "forced" to incorporate one more ingredient for the little ones, potatoes. Ingredients

  • 1 clean free-range chicken
  • 1 cebolla great
  • 4-6 carrots
  • 2 cloves of garlic
  • 8 plums
  • 1 lemon
  • 2 potatoes
  • Buy
  • 1 glass of white wine
  • 2 sprigs of rosemary
  • 1 branch of laurel

Crafting

We peel the onion and cut into thin julienne. Next we peel the carrots and cut them into slices.

We place on the tray of oven the onion, the carrot, the garlic cloves, two sprigs of rosemary and one of bay leaf.

Season the chickenWe place it on top of the vegetable bed and sprinkle it with the juice of half a lemon. Next we fill the chicken with the lemon.

We water with a drizzle of olive oil and put in the oven preheated to 180º for about 1 hour. When half the time has passed, we will turn the chicken, so that it becomes good on all sides and we will add the plums and the glass of white wine.

When the chicken is done, we will raise the temperature of the oven to toast the skin.

We serve accompanied by chips diced.
