Spinach is a good and very soft vegetable, accompanied by ricotta cheese is a filling with a creamy and fine texture, although we can change the cheese and substitute it for another that we like, but above all that is creamy.

Ingredients
- For the crepes:
- 150 gr. Of flour
- 3 eggs
- 125 ml. milk
- Butter
- Sal Island
- For the filling:
- 500 gr. spinach
- 200 ricotta cheese or cottage cheese
- Liquid cream
- Butter
- Salt and pepper
Preparation
- We prepare the crepes, put all the ingredients except the butter in a bowl and beat it well until there is a dough without lumps, it should not be too thick. We let it rest for about 20 minutes.
- We heat a pan of the size we want the crepes, put over medium heat and spread it with a little butter, add a little of the dough and distribute it over the entire base of the pan, let it brown a little and with With the help of a spatula we turn it over and finish it.
- We repeat the operation with each one, until all the dough is finished.
- We prepare the filling.
- In a pan we put a little butter when it is hot we will put the chopped spinach, sauté them and add the cheese, all chopped, stir it all together until everything is incorporated, add a few tablespoons of liquid cream, salt and pepper, let it cook for a few minutes .
- When we see that everything is like a cream, we taste salt.
- We fill the crepes with this spinach and cheese cream and we place them in a source, and bake them for 10 minutes at 200ºC, remove and serve hot.
