Ingredients
  • 1 large turkey tenderloin
  • 4 glasses of round rice
  • 150 grams of assorted mushrooms or if you prefer just mushrooms
  • 2 cloves of garlic
  • 1 ripe tomato
  • Sal Island
  • Parsley
  • Virgin olive oil
  • 1 teaspoon food coloring
  • A pinch of sweet paprika

Preparation
  1. First we have to prepare the meat, we clean the possible fat well and wash it under running cold water.
  2. Dry with absorbent paper and chop the turkey tenderloin into bite-size pieces.
  3. Now, we prepare a pan with a good bottom and add a drizzle of virgin olive oil.
  4. When the oil reaches temperature, fry the meat over medium heat.
  5. Add the chopped garlic cloves and sauté until the meat takes on a little color but carefully so that it does not burn.
  6. Meanwhile, we are going to grate the tomato with the help of a grater.
  7. Add the grated tomato to the pan and add a pinch of sweet paprika.
  8. Now, we clean the mushrooms well and add to the fire, sauté for a couple of minutes.
  9. We stir well and add the rice to the pan.
  10. Before adding the water, we stir a little so that the rice mixes well with the rest of the ingredients.
  11. Now, we add the water, which will be two glasses for each glass of rice, or according to the manufacturer's instructions.
  12. Add salt to taste, parsley and a teaspoon of food coloring.
  13. We stir for the last time and let it cook for about 18 minutes.
  14. To finish with a special touch, once we remove the rice, add a drizzle of lemon juice on top and let it rest without stirring the rice.
  15. Cover with a clean kitchen towel and let it rest for about 5 minutes before serving.

Notes
One trick to make the rice come out perfect is not to stir again once the water has been added. To get a little crust on the bottom, raise the heat to high a couple of minutes before the end of cooking.
